The Perfect Vegetarian Nut Roast Recipe
So today I wanted to share with you the perfect Nut Roast in my opinion. As I am vegetarian now, I will be eating this Nut Roast on Christmas day.
1 Leek Chopped into bite size pieces
2 Carrots Peeled & Chopped into bite size pieces
½ a Rep Pepper chopped into bite size pieces
2 Cloves of Garlic
200g Dried Apricots (chopped up)
200g Ready to go Chestnuts
1 Tablespoon of Dried Oregano
2 Tablespoons of Flaxseed mixed with 6 Tablespoons Of Water
100g of Almonds
100g Brazil Nuts
50g of Buckwheat Flour
1 egg (beaten)
Salt & Pepper
Start by preheating the oven to 180’c
Mix the flaxseed in a small bowl and leave it to sit for five to ten minutes.
In a saucepan add the crushed garlic with some olive oil and heat until the garlic turns a bit golden. Then add all of the chopped veg and apricots and cook for 2-3 minutes, until softened.
Then add the Chestnuts and all of the herbs. Mix and stir for another 2 minutes. Then put to side to rest.
In a food processor, add the nuts and blend till you have a flour consistence with a few bite size nut pieces. (you still want to have some chunky pieces).
Then in a large mixing bowl. Combine the egg, flour, nuts, flaxseed, salt & pepper, and vegetables mix well.
Then in a loaf tin, lined with parchment paper. Add your nut roast mixture. Make sure to spread it out – I find using your hands works well.
Put the nut roast into the oven for 50 minutes. Then Enjoy.
Personally I like to finish my nut roast off, with some gravy and some cranberry sauce, as well as all the trimmings!
I also just want to say, that you can make this nut roast vegan. Just remove the egg. However I will say that it does end up being very very very crumbly without the egg. You may want to use an egg replacer?!
