Nothing says Christmas, like homemade Mince Pies
So I know I shared with you all a post about buying pre made mince pies. But today I wanted to share with you a recipe on how to make them!
175g plain flour – plus extra for dusting
100g chilled butter
1 medium egg yolk (no white) beaten
icing sugar for dusting
Set your oven at 180’c to start warming it up now!
In a large bowl, rub the flour into the butter using your finger tips, till it starts to look like bread crumbs.
Make a well in the centre and add the egg yolk and 1 tablespoon of water. Using your hands mix it and work the ingredients into a dough ball.
Wrap the dough in Cling Film and chill in the fridge for 15-20 minutes.
Whilst the dough is resting in the fridge, line your muffin tin with parchment paper. (this will make it easier to get out the mince pies when they are cooked.)
On a floured surface, roll out the pastry till its not too thick but not too thin that it falls apart.
Using a round cookie cutter press out circles of the base of your mince pie.
And place into the muffin tin, on top of the parchment paper. Keep going till you have done eight mince pie basis.
Then its time to fill your mince pies with mincemeat. I was lazy and brought ready made mince meat. But you could make it if you wanted to.
Then go back to your dough and roll it out again, and cut out using a star cookie cutter, your mince pie toppers. Simply place them on top of the bases and mincemeat.
Then its time to cook your mince pies, so put them straight into the oven for 10-15mins or until they are lightly golden.
Once they are cooked, I would say leave to cool, but the reality of that is slim.
So if you can just leave them sitting in the muffin tin for about 3 minutes, then transfer them onto a plate too cool.
Dust them in icing sugar.
Now you can dive in and devour your mince pies.
